About two years ago or so I was doing a holiday plantation meal demonstration at Stratford Hall Plantation. I spent the whole day in the kitchen literally slaving over hot pots and pans and a blazing hearth fire. As each crowd came in I explained what plantation life was like for the enslaved during Christmas. Towards the end of the day a couple walked in and one of the docent/volunteers who was directing the flow of people from the kitchen to the house remarked to me with pursed lips, “You don’t have to go into all the history and all that, just tell them you’re the Cook and be done with it…..”
How do you even begin to respond to that?
